Kilimanjaro
Big news Tumblr: I am training (ahem, working my fat ass off) for a 2014 summit of Mt Kilimanjaro! Pretty soon I’ll begin fundraising. The funds go towards “Summit For Someone”, to benefit at risk youth and pay for them to participate in therapeutic recreation programs. I’ll be updating pretty regularly with my fitness project, and once my fundraising stuff is all squared...

Our 2012 Goal
Is to hike 500 miles before the end of the year. An ambitious goal, but totally accessible. This will lead to new wilderness recipes and lessons for this little old tumblr too!
So far:
2/12 Cascade Head 4.5 miles
3/4 Peavy Arboretum 4.2 miles
3/11 Eagle Creek 4.5 miles
Current total: 13.2 Miles
Not too shabby for one month of winter! More soon.

Hiking Goals!
We’ve set some hiking goals for ourselves for the year! We’re shooting for 500 miles this year….and I, personally think we can beat it! Our first hike of 2012 coming this weekend!

Black Bean Mole Tostadas
Ingredients:
1 cup instant black bean flakes
6 prepared corn tortillas
2 tbsp powdered mole sauce or 1/4 cup pre-made mole sauce
1 cup Olive oil
Directions:
1.Boil water and cover bean flakes, will thicken after it sits a few minutes. Add additional hot water if too thick.
2. Add boiling water to mole powder until it makes a thick sauce, cover and let sit. Add additional water if too...
